Better Bubble Tea – A Fun & Healthy Twist!

Ingredients
  

  • 4 Green teabags organic
  • 1 L Water filtered, boiling
  • 4 tsp Monkfruit sweetener
  • 0.75 cup Tapioca pearls
  • 0.25 cup Pomegranate juice
  • 0.5 cup Coconut milk optional

Instructions
 

  • Brew the teabags in the boiling water. Add the monkfruit. Allow to cool.
  • Cook the tapioca pearls by adding them to a saucepan of boiling water. Stir. Turn down heat and simmer for 15 minutes, stirring occasionally. Once translucent pour the contents of the saucepan into a fine metal sieve and rinse with cold water.
  • Remove the teabags from the tea and discard.
  • Divide the pearls between 4 large glasses.
  • Pour one quarter of the tea into each glass.
  • Pour one quarter of the pomegranate juice into each glass.
  • Stir well. You can add a dash of coconut milk at this stage if you wish.
