Slow Cooker Beef Enchiladas – Easy, Nutritious & Fussy Eater-Friendly!

These slow-cooked beef enchiladas are a perfect meal for fussy eaters and the whole family! Slow cooking makes the meat tender and easy to chew—great for kids with poor oral motor skills.   • 1 Slow cooker

Ingredients
  

  • 1 kg Beef chuck roast
  • 1 tbsp Cumin
  • 1 tbsp Smoked paprika
  • 0.5 tsp Sea salt
  • 0.25 tsp Black pepper
  • 1 Onion finely chopped
  • 1 cup Water
  • 6 Corn tortilla gluten free
  • 1 cup Tasty cheese grated
  • 1 tbsp Cornflour

Instructions
 

  • Rub spices, salt and pepper over the beef roast and place in slow cooker. Add the water and onion. Cook, covered on low heat for 8 hours.
  • Shred the beef with 2 forks.
  • In a small bowl mix together the cornflour and a little bit of water. Then stir through the beef.
  • Preheat oven to 180℃.
  • Lightly great a roasting pan. Place the tortillas in the roasting pan and put 1/6th of the meat in each tortilla. Fold over the tops of the tortillas, and sprinkle the whole dish with the cheese.
  • Bake, uncovered for about 20 minutes or until the cheese is melted.
  • Serve with iceberg lettuce and avocado.
